Carrot and coriander soup

This silky soup can be prepared in 5-10 minutes plus cooking time and is well worth making for a family meal as children love the sweet flavours. It serves 4, and these quantity of ingredients are for a Morphy Richards Saute soup maker that has a 1.6l capacity.

Ingredients:

  • Tablespoon of olive oil
  • 500g of carrots, peeled and cut into chunks
  • One small potato peeled and cut into chunks
  • Half a large onion
  • Half a red pepper
  • Vegetable stock cube (or homemade stock if you have it)
  • A good handful of coriander
  • Salt and pepper to taste
  • Water

Method:

  • If you have a saute feature on your soup maker, then saute the onions in the olive oil until soft. If not, then saute them separately in a pan and then add to the soup maker.
  • Add the other ingredients to the soup maker, water last, making sure that you don’t go past the max line on the inside of the machine.
  • Cook the soup according to your machine’s instructions, using the blender function.
  • Once cooked, serve immediately and garnish with some extra coriander.

Sweet potato

Creamy sweet potato soup

Sweet potatoes make a delicious and healthy alternative from white potatoes and can be great when used as wedges or chips. Why not try this soup maker recipe for sweet potato soup for a change, it definitely won’t disappoint.

Quantities are for a 1.6 litre soup maker.

Ingredients:

  • 2 tablespoons olive oil 
  • 1 small onion, diced 
  • 1-2 teaspoons salt 
  • Freshly ground black pepper 
  • 1 shallot, diced 
  • 1/2 teaspoon cinnamon 
  • 2 cloves garlic, chopped 
  • 3-4 sweet potatoes, peeled and cut into 1-inch cubes 
  • 1 chicken or vegetable stock cube
  • 1 teaspoon paprika
  • Water

Method:

  • Using the saute setting of your soup maker, gently cook the onions in the olive oil until pale and transluscent. (If you don’t have a saute setting then do this stage in a pan).
  • Then add the shallot and garlic to the mixture and saute until soft.
  • Add the other ingredients into the soup maker, topping off with the water up to the max line.
  • Cook on the blender setting of your soup maker according to the manufacturer’s instructions.
  • Serve when cooked, seasoning to taste.

 

Leek and potato soup

This classic winter warmer couldn’t be easier to prepare. When we last made it, some people wanted it chunky and others smooth, so we chopped the pieces of leek and potato really small so that the chunky soup was really tasty. Then we blended the remainder for the people who wanted it smooth. If you do this, make sure you mix the ingredients up before adding them to the soup maker, otherwise some portions might miss out on all the flavours!

Ingredients:

  • 350g chopped leeks
  • 350g chopped potato
  • Clove of garlic, finely chopped
  • Half a large onion, finely chopped
  • 2 tbsp olive oil
  • A handful of chopped coriander
  • A vegetable stock cube
  • Water

Method:

  • Lightly saute the onion and garlic, either using the saute function of your soup maker, or otherwise in a frying pan
  • Once the onion is nice and soft, add the remaining ingredients, apart from the water
  • Finally top up with water to the max line.
  • Cook according to your soup maker’s instructions
  • Serve once complete, seasoning to taste

Red pepper and tomato soup

This fresh and tasty soup recipe is so easy to make and really gives you the feel-good factor. Its vibrant colour makes it look as appetising as it tastes.

Ingredients:

  • 3 red peppers, cut into chunks and de-seeded
  • 1 medium onion peeled and chopped
  • 500 g plum tomatoes (you can remove the skin for the smoothest result – just slit and plunge into boiling water, the skin will then easily peel off)
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 2 tbsp tomato puree
  • 2 sticks of celery chopped
  • Salt and pepper to taste
  • Vegetable stock cube
  • Water
  • Basil to garnish

Method:

  • If your soup maker has a saute function, then saute the onion and garlic in the olive oil first. If you don’t have this function then do it in a pan and transfer to your soup maker. You’ll know when it’s ready as the onion will turn translucent.
  • Add the other ingredients and top with water to the max line according to the instructions of your soup maker.
  • Set the programme to smooth, and leave to cook
  • Serve with a garnish of basil and some crusty bread.
