How to make delicious hearty tomato soups with the NutriBullet

If you’re a fan of good old-fashioned tomato soup then there’s a wealth of options for you to explore once you have a NutriBullet. Whilst the 600 series and Nutribullet Pro don’t enable you to make the soups in them entirely, the NutriBullet RX does. For now, we’ll assume you have one of the first two models.

 

Country tomato nutriblast recipe

Ingredients:

  1. 6 chopped plum tomatoes
  2. 1/2 small chopped sweet potato
  3. 1 small chopped onion
  4. 2 small cloves of garlic
  5. Fresh herbs eg. basil, oregano
  6. Salt and pepper
  7. Two small chopped carrots
  8. 1 pint of vegetable stock

Method:

  • Lightly sauté the onion and garlic
  • Add the carrot and the vegetable stock and cook until soft
  • Then add the tomato and stir for a couple of minutes
  • Remove from the heat and leave mixture to cool
  • Take the Tall or Colossus cup
  • Place all the ingredients in, making sure that you don’t exceed the max line
  • Screw on the extractor blade and place on the power base
  • Blend until smooth
  • Reheat in the pan
  • Add a little milk or cream if you want to make the soup more hearty
  • Serve with a garnish of basil and some lovely warm bread!

Spicy tomato soup recipe for the NutriBullet

If you’d like to turn up the heat a little, then why not try out this recipe for spicy tomato soup. Again, all fresh ingredients, but with a hint of chilli to add a piquancy that’s irresistible!

Ingredients:

  1. 2 tablespoons extra-virgin olive oil
  2. 1 small chopped onion
  3. 1 small chilli (add to taste)
  4. 800g of chopped plum tomatoes
  5. 1 1/2 cups water
  6. A handful of fresh basil
  7. Salt and pepper to taste
  8. Balsamic vinegar, to taste

Method:

  • Heat the olive oil in a large saucepan over medium heat
  • Add the onions and chilli and cook until the onion is starting to brown
  • Stir in the tomatoes and their juices, plus the water, and bring to a boil.
  • Reduce the heat and then simmer, stirring occasionally, for about half an hour.
  • Add the basil, salt, and balsamic vinegar, stir
  • Remove from the heat, and leave it to cool
  • Add the mixture in batches to the tall cup (make sure you don’t go past the max) and blend until smooth
  • Serve with crusty croutons
